Mannoush Pizza

PREP TIME: 10 MINS | COOK TIME: 10 MINS | SERVINGS: 4 

INGREDIENTS:

  • Lebanese Bread OR Greek pita bread
  • Extra virgin olive oil
  • Umm Baharat’s Zaatar mix
  • 2 tomatoes, optional
  • 2 Lebanese cucumbers, optional
  • Greek yoghurt OR Labna, optional
  • olives, optional
  • spring onion, optional
  • fresh mint, optional
  • salt, to taste

METHOD:

  1. Prepare your vegetables if you have chosen to use the optional ingredients.
  2. Mannoush can be cooked in multiple ways such as on the stove top, in the oven, or grill. This recipe will be using the stove top method where you will need a frypan.
  3. Add a drizzle of oil in the fry pan and place your bread in flat.
  4. Keep watch on the bread by slightly flipping the underside as it will start to brown quickly.
  5. Once the bread has lightly browned, flip it over and sprinkle the Zaatar mix on top, along with another drizzle of extra virgin olive oil.
  6. Once the other half of the bread browns, take it off heat and place it onto a plate.
  7. You now have a few options! Firstly, you can flip the bread in half and then cut into strips and serve.
  8. Secondly, if you have chosen to use the optional ingredients – you can spread the Greek yoghurt/Labna, and coat with the vegetables + a few sprigs of mint on top. You can either serve it as is (pizza style) OR wrap into a sandwich.
  9. Serve with your favourite beverage such as tea, coffee or Ayran and enjoy!
