PREP TIME: 15 MINS | COOK TIME: 20 MINS | SERVINGS: 4-6
INGREDIENTS:
- 2 cups basmati OR long grain rice
- 2 carrots
- 2 cloves garlic
- 1 can diced tomato
- 1 cup corn kernels
- 1 large onion
- 1/2 cup frozen peas
- drizzle of sunflower oil OR olive oil
- 4 tablespoons of Umm Baharat's 'Mexican Fiesta' blend
- salt, to taste
- fresh coriander, optional (to garnish)
METHOD:
- Prep your vegetables by mincing your garlic, then dicing your carrots and onion.
- Heat the oil in a large pot over medium heat.
- Add the diced onion into the pot - stirring frequently until onion become translucent.
- Once onions are translucent, add in your minced garlic and cook for a further minute or two.
- Add in the washed rice and 4 tablespoons of Umm Baharat's Mexican Fiesta blend and stir everything through together - for about 2 minutes).
- Pour in the can of diced tomato, along with the water needed to boil the rice (1.5 cups of water per cup of rice).
- Add in the corn, carrots and peas, making sure to stir and incorporate everthing together.
- Once the water starts to boil, cover and reduce heat and simmer until rice is cooked through (this will take approximately 15 minutes).
- Serve immediately, garnished with fresh coriander on top.
