Mexican Rice

PREP TIME: 15 MINS | COOK TIME: 20 MINS | SERVINGS: 4-6

INGREDIENTS:

  • 2 cups basmati OR long grain rice
  • 2 carrots
  • 2 cloves garlic
  • 1 can diced tomato
  • 1 cup corn kernels
  • 1 large onion
  • 1/2 cup frozen peas
  • drizzle of sunflower oil OR olive oil
  • 4 tablespoons of Umm Baharat's 'Mexican Fiesta' blend
  • salt, to taste
  • fresh coriander, optional (to garnish)

METHOD: 

  1. Prep your vegetables by mincing your garlic, then dicing your carrots and onion.
  2. Heat the oil in a large pot over medium heat.
  3. Add the diced onion into the pot - stirring frequently until onion become translucent.
  4. Once onions are translucent, add in your minced garlic and cook for a further minute or two.
  5. Add in the washed rice and 4 tablespoons of Umm Baharat's Mexican Fiesta blend and stir everything through together - for about 2 minutes).
  6. Pour in the can of diced tomato, along with the water needed to boil the rice (1.5 cups of water per cup of rice). 
  7. Add in the corn, carrots and peas, making sure to stir and incorporate  everthing together. 
  8. Once the water starts to boil, cover and reduce heat and simmer until rice is cooked through (this will take approximately 15 minutes).
  9. Serve immediately, garnished with fresh coriander on top.
  10. Enjoy!
