Orecchiette Mushroom Pasta

PREP TIME: 15 MINS | COOK TIME: 20 MINS | SERVINGS: 4

INGREDIENTS:

  • Orecchiette pasta (or whatever you have in your pantry)
  • pasta sauce
  • 1/8 cup thickened cream
  • 20 grams butter
  • portobello mushroom (1 per individual)
  • finely chopped parsley, to garnish (optional)
  • goats cheese, optional 
  • dried oregano
  • salt, to taste

METHOD: 

  1. Cook your pasta until al dente, drain and put aside. Make sure you reserve at least a cup of the pasta water. 
  2. Boil your mushrooms until the water evaporates (head to our Instagram page to find out more via story highlights). Remove from the pan and put aside. You will see there will be caramelisation on the pan due to the mushrooms. 
  3. Using the same pan, add in the butter till melted, along with the pasta sauce. 
  4. Loosen the pasta sauce with the pasta water to your preferred consistency (add the water in slowly).
  5. Add in the thickened cream, and stir till everything is well combined. 
  6. Add in your cooked pasta.
  7. Slice up your mushroom into strips and serve on top of the pasta.
  8. Garnish with parsley, goats cheese & our dried oregano.
  9. Enjoy!
